Wyeast 2278 - Czech Pilsner

2 kg LDME added at flame out

Temperatures:
First week primary fermentation was 15 C in the fridge
Temperature then dropped to 12 C
Raised to 15 C again after racking as the gravity was still quite high before finally dropping to 12 C again.

Notes:
Throughout fermentation this brew tasted very clean and pleasant.
This is probably the best lager we've done to date. Very clean and crisp tasting and very pleasant to drink with good head retention.
